Roasted Potato Salad with Creamy Dijon Vinaigrette

Golden brown potato wedges with a creamy tangy dressing just sounds like the perfect summer side doesn’t it? I found this irresistible recipe on CookingLight.com and couldn’t resist pairing it with a maple beer glazed roasted salmon for dinner last night. The flavors were fantastic and the brightness of the sauce made for a perfect dinner — not to mention a great side for a summer picnic this afternoon!
