Roasted Drumsticks with Chipotle Raisin Glaze

I’m going to let you in on a little secret… I could care less about who wins this year’s super bowl. I’m not a fan of either team (sorry Ravens and 49ers fans) and quite frankly I’m stupefied and bewildered about this entire NFL season. My team once again has let me down (Romo you are as cute as a lost puppy but for the love I’m at a loss for words).  And all I’m left with is another year sighing after I say, “Yes, I’m a Cowboys fan.”

Oh well, here’s to next year right? Right?

Until then, lets cook some awesome Superbowl grub, have fun with friends and family, and pretend to care about the halftime show.

Made with Chipotle Raisin Sauce posted last week, these Roasted Drumsticks with Chipotle Raisin glaze are a sinful combination of spicy, sweet, and smoky that will make your mouth very happy.

Roasted Drumsticks with Chipotle Raisin Glaze makes 8 to 12 drumsticks

* This can be made leaner by using skinless drumsticks. In fact I like them better that way. No need to adjust baking time.

Preheat oven to 400°F. Reserve 1 cup of the Chipotle Raisin Sauce and set aside. With a spoon or basting brush, lightly brush all sides of each drumstick with the Chipotle Raisin Sauce. Place the sauced drumsticks on a baking sheet lined with foil lightly sprayed with cooking oil.

Baste drumsticks with the Chipotle Raisin sauce every 10 minutes while roasting. Roast for 30 minuets or until cooked through (juices run clear when poked with a knife tip).

Plate, serve, and use the reserved sauce for dipping. Cheers and may the best team win!
