How To Roast Vegetables
I remember loathing vegetables growing up. I love my parents but they were big fans of steaming everything they could for longer than anything should have ever been steamed. The sad pile of mushed broccoli and cauliflower left little to be desired. Scarred by mushy vegetables, I vowed to find a different way to feed my family nutritious vegetables without stimulating their gag reflexes. Victory was found the day I placed cauliflower in the oven. Roasting vegetables at high and dry heat that the oven provides, creates a natural caramelization that brings a slightly sweet flavor while retaining a vegetable’s nutrients. A wide variety of vegetables can be roasted. So grab a few and be amazed at how much delicious flavor a little vegetable can provide!
