Herbed Feta Stuffed Zucchini

I’m going to let you in on a little unknown fact about me… growing up I literally was passed through school. I don’t think I ever honestly passed a class. Well, that’s not true. I made straight A’s in gym, hunting and outdoors, photography, ceramics, sometimes art, and I think I usually slipped by math with a low C. Teachers liked me but they had absolutely no patience for me what so ever. Basically, I was a kid who’s head was always in the clouds and never wanted to be in school. When it was time to graduate high school, my counselor stared me straight in the eye and said, “You are sweet and pretty. Go to art school where you won’t need to know English or Math.” (Let me tell you something, I went to art school and there was A LOT of English and Math!)

And here I am… owning my own business that includes lots of writing, math, and every other subject that I never learned until someone sat me down one day and wouldn’t let me out of his sight until I correctly wrote my first research paper at the age of 21 — it took almost 2 years. I owe everything I now know to un underpaid community college professor who didn’t give up on me back then. There’s more to that fabulous story but I’ll have to save that for another day as I am emaciated by wordplay after writing and recipe developing for 4 different clients in the past 2 days. My head is throbbing and I just don’t I have it in me to let you in on that embarrassing and emotional story…just not yet that is. Instead I’d love to share with you this fabulously amazing Herbed Feta Stuffed Zucchini that I just made. Yes, I know education and zucchini have nothing in common (unless you count how many times it took me to spell zucchini correctly) but just go with me in this one…

Savory and bold, these herbed stuffed zucchini are a prime example of how the simplest of fresh flavors can produce amazing results.

It all starts with hulling out some zucchini.


Then chopping herbs…


and blending them with feta cheese…

Finally, you fill the zucchini with the glorious cheese and bake in the oven until slightly golden.

Herbed Feta Stuffed Zucchini

Savory and bold, these herbed stuffed zucchini are a prime example of how the simplest of fresh flavors can produce amazing results.


  • 4 medium zucchini
  • Pinch of salt
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh oregano leaves
  • 2 tablespoons fresh fresh parsley, roughly chopped
  • 8 ounces (weight) feta cheese, drained and cubed
  • 2 tablespoons cream or milk
  • Wheat bread crumbs


  1. Preheat oven to 400°F.
  2. With a spoon (a grapefruit spoon works best), scoop out the seeds of the zucchini but leave most of the "meat." Sprinkle each zucchini with a pinch of salt; set aside until needed.
  3. Place herbs in food processor and pulse until finely chopped. Add feta and cream and process until smooth, about 20 seconds.
  4. Spoon 1 to 2 spoonfuls of the feta mixture into the zucchini "boats." Top feta with a large pinch of bread crumbs and transfer to a baking sheet. Place in the oven and bake for 30 minutes or until the zucchini are tender. Once the zucchini become tender, turn on the broiler and broil for 3 to 5 minutes until golden. Serve.


All ovens are different. Keep an eye out around 20 minutes to make sure zucchini do not become overcooked.

White bread crumbs or even panko will work as well.
