March 26, 2013 Roasting the strawberries in this parfait recipe brings out their natural amazing flavor and creates a luxurious syrup while still maintaining a firm texture. This is a natural snack at it’s best — perfect for young and old alike. This recipe was gone in litteraly seconds. I had kids and adults with yogurt covered faces and big eyes saying, “more!” Quick, simple, and beyond good. View Recipe This recipe was written for Disney’s Spoonful.com. March 15, 2013 Stop. Before we go any further, I have to say these are irresistibly delicious and I’m actually a little mad that my husband took them with him on his 3 day trail running race this weekend. It’s spring break. I have taken on a few extra clients this month and doubled my work load just in time to have Mia at home all day every day for a week. Makes complete sense, right? No one ever said I was smart. Monday, I thought I was going to get through. With deadlines looming I just took my computer wherever Mia and …

March 10, 2013 A bowl of savory chili is one of my family’s favorite meals but I have to get the ingredients just right for everyone or I have a mutiny on my hands. Too spicy and my child turns her nose at it. Too bland and my husband gives me the, “you expect me to eat this look.” To keep the kitchen table at peace, I’ve found the perfect blend of spices and added a few vegetables and beans to pump up the nutrition factor. Chili can be used for more than just chili too! Add a spoonful on a potato, on …

March 7, 2013 It’s probably only my kid that doesn’t like meatloaf. Doesn’t matter what kind, she just won’t eat it. And I say, “It’s just like a hamburger — what’s the issue?” She, expectantly, doesn’t relate to my way of thinking (I’m dreading that this is not the last time that will happen either) and refuses to eat her dinner. Ugh. This is when I reach for the wine. If you have a child who hates on meatloaf as much as mine, try out this little trick next time. Use a cookie cutter on a slice of meatloaf. Preferably one without too …

February 19, 2013 What?! Another raisin post?! I’m sure that’s what you are saying to yourself but don’t you worry it’s worth it. My husband is a lucky man. Not only is he married to one of the most awesome women ever but with me being a California Raisin Ambasador he has unlimited access to his favorite running fuel, raisins. For those of you who don’t know, my crazy, insane, and absolutely off his rocker husband of mine is an ultra marathon trail runner. He is so insane in fact that he was excepted into the highly regarded Western States 100 mile trail race …

February 2, 2013 There are days when you just need a cheesy, creamy, crunchy, fall on the floor fast comfort meal or a quick snack for game day. This is one of those days and this is one of those meals. It’s simply pure awesomeness on a piece of toast. Chicken Artichoke and Spinach French Bread Pizza makes 4 servings 2 Tablespoons butter 1 Tablespoon all purpose flour 1 cup milk 1 cup grated parmesan cheese 1/4 teaspoon salt pinch of fresh grated nutmeg pinch of fresh ground black pepper 1 loaf French bread 1 cup shredded mozzarella cheese cooked chicken (grilled, broiled, …

February 1, 2013 My daughter is obsessed with pink. pink. pink. pink. … and more pink. There are days that this neutral and earthy color loving mom can barely stand it. I mean really, there’s only so much pink that I can take. I clinched my teeth when she said she wanted to paint her room pink, cringed when she asked Santa for a pink bicycle, and shook my head when she said I should wear a pink dress to a James McMurtry show but there is one think I will never say no to and that’s pink cupcakes. Made with all natural …

November 2, 2012 You guessed it… Another raisin post. How could I not? The flavor of a raisin just goes right along with fall spices like ginger, cinnamon, and nutmeg. It’s like prosciutto and figs, beer and peanuts, Brett Favre and gorgeous, Snookie and a pound or two of makeup…you can’t have one without the other. That’s why when I was toasting up these sweet pumpkin seeds after Tim and Mia had carved a jack-o-lantern, I had to throw in a little raisin power to make the perfect fall snack mix. Did you know that studies show that raisins control your hunger by …

September 28, 2012 Recently, I spent time in California raisin country learning all there is to know about raisins as apart of a blogger ambassador program with California Raisins. Posts are soon to come about my time there, tons of information that you probably didn’t know about raisins, why you don’t put lipstick on in front of a bear, and info on upcoming recipe contests with California Raisins and Relish Magazine. But for now I came home with pounds upon pounds of the glorious little dried fruits that I have nowhere to store them. So, today Mia (my soon to be 4 year-old) …

July 19, 2012 One of my favorite things about summer is making popsicles and granitas with my daughter. Creating our own gorgeous versions is much more fun and ten times more delicious than unwrapping a store bought neon dyed one. Here’s an extremely simple recipe for Mia’s favorite popsicle, Cherry Yogurt Popsicles. Made with real fruit and not concentrated sweetened juice, these sweet and fresh popsicles are not only delicious but good for you. Cherry Yogurt Popsicles makes 10 3oz popsicles 16 oz weight (1 bag) frozen cherries, defrosted* 1 cup plain yogurt** I used White Mountain Bulgarian Yogurt 2 Tablespoons pure honey …
